A frittata is an egg based dish similar to a crustless quiche or omelette. It can be made with a wide assortment of ingredients of your choosing. It’s easy to prepare, versatile and tremendously satisfying. The recipe below is a dish from my childhood which we referred to as a western omelette.
It can literally be served for breakfast, lunch or dinner. It pairs well with a fresh fruit salad or simple green salad.
Ingredients:
1 large Vidalia onion - chopped finely
1 bell pepper - chopped
8-12 cherry tomatoes - cut in half
1 Yukon Gold potato - bake in microwave with skin on for three minutes, then dice
1/2 cup ham - diced
6 eggs
3 TBSP cream
Salt, pepper & cayenne to taste
1/2 cup grated white cheddar
Preheat oven to 350°
Lightly grease 10”-12” round baking dish
Sauté onion in a pan with a pat of butter or a teaspoon of olive oil on medium heat.
Once onion becomes translucent and begins to brown add bell pepper, sauté 2 minutes then add ham and tomato. Sauté for just a few minutes more, then add potato.
Add all sautéed ingredients to the baking dish.
In a separate bowl whisk together eggs, cream, salt and pepper. Fold in grated cheese. Add to casserole dish making sure all ingredients are fully covered with egg mixture. Additional grated cheese may be added to the top.
Bake in preheated oven for 30 to 40 minutes or until golden brown.
