What's Cookin' In the Neighborhood
Squash Casserole
1 1/2 pound of yellow squash (FRESH)
1 1/2 cups shredded cheddar cheese (save some for topping)
1 1/2 cups crumbled Town House Wheat Crackers (save some for topping)
2 tablespoons mayonnaise
Preheat the oven to 350. Wash the squash and cut into 1/2 inch rounds. Put about half an inch of water in a pot and bring to a boil. Add squash, cover and cook (stirring occasionally), for about 5-7 minutes. When the larger squash round starts breaking up and the seeds come loose the squash is done. Drain the squash. In a large bowl, combine the cooked squash, cheese, and mayonnaise. Stir until the cheese is melted. Add cracker crumbs and stir until well combined, allowing the squash to break up as you stir. Pour the mixture into the baking dish and smooth out evenly. Sprinkle with a little more cheese and cracker crumbs. Bake for 30 minutes and serve warm.
