Hello once again to all my faithful readers! Hope you are keeping cool on these hot, summer days. The temperature has already been in the upper 90's. When out in the heat be sure to drink plenty of water.
Thanks to my wonderful friends who gave me fresh snap beans, potatoes, tomatoes, and sweet peppers. I surely have been enjoying them. My first tomato sandwich was heavenly. Bryan has had some of the fresh vegetables for his lunch. I was excited again on Monday night when Bryan brought in 3 bags of yellow squash, zucchini squash and sweet peppers. They had just been picked that day. I've also had sweet peppers. They had just been picked that day. I've also had sweet corn that came from the grocery store. A plate of fresh veggies is some good eating and makes you smack your lips enjoying every single bite. Let me tell you, I was in hogs-heaven! Ha! Ha!
Congratulations to MHS students Dorci Lourigan and Megan Fountain. Dorci was chosen High School student of the year and Meggan was Jr. High School student of the year. We are very proud of you.
Guess what? I have a band new friend who enjoys recipes and cooking with me. A few days ago a message was left on my phone from a person I do not know. When I returned her call in our conversation someone had given her some Zucchini squash and she wanted to make Zucchini bread. Just so happened I have made Zucchini bread many times so I gave her the recipe. She got my phone number from my column and enjoyed seeing the recipes I had this month. Stacy, you made my day talking to you. Keep on reading our weekly paper, The Era-Leader.
Happy belated 40th wedding anniversary to my nephew Randy Seal and his wife Nicole. They celebrated with immediate family members, Saturday night at their home on May 20th.
My granddaughter told me they had bad weather this past Monday, June 12th. They had a hail storm at their residence in Jayess, Mississippi.
Memorial Day was May 29th. This is a day set aside to remember those who fought and gave their life. Bryan grilled the meat and I prepared the rest. My sister, Jackie, came and had lunch with us.
Nell’s Zucchini Pizza
1- 12 oz pkg grated mild cheddar cheese
3 cups thinly sliced Zucchini
1 medium chopped onion
4 eggs
1 cup Bisquick (1 small pkg)
½ cup oil
½ teaspoon salt-dash of black pepper
Slightly beat eggs - add everything except cheese and zucchini. When everything is mixed well - add cheese and zucchini. Pour into a 11x14 baking dish. Bake 30 minutes and 350F. Note you can substitute yellow squash if you do not have zucchini.
Christian sympathy is sent out to the family of Lillie Merl Hamilton. Dorothy Louise Dedon, JoAnn Hightower, Rocky Lane Watson and James Lester "Jinn" Wood. It is hard to give up our beloved ones but it is also hard for us to see them suffer day after day. God knows what is best. Trust in him!
Thought for the week! Lord the storms of our lives sometimes seem like they will swamp us. Help us trust that you are the Master of the storm, to place our faith in you when life's winds blow fiercely.
