Funnel Cakes
Ingredients -1 1/2 cups Complete Pancake Mix - 3/4 cups water - 2 tablespoons Sugar - 2 teaspoons Vanilla Extract - Oil for frying Powdered Sugar for sprinkling
Directions -
Mix all your dry ingredients -(complete pancake mix and sugar), with the wet ingredients, (water, and vanilla) all together in a large bowl. Mix well until batter is smooth with no clumps. Heat oil until it is hot. Put the batter in a funnel or squeeze bottle to pour into hot oil. Be careful not to cause a splash. Fry until golden brown then flip (about a minute on each side. A bit longer if making larger ones.) when cooked, move the funnel cakes onto a paper towel to soak up the excess oil. Place on a plate and sprinkle with confectioners sugar and enjoy.
