I'm happy to be well and able to share this week. Last week I caught some kind of bug virus and couldn't shake it. After taking much medication and prayer, I'm feeling much better. Smart Cooking
Cook potatoes whole (no peeling) in a pot of salted boiling water. When they are done, place them in cold ice water. Use a knife to make an X on one end of the potato. The skin will slip off and be ready for mashing.
