Thank Heavens for good neighbors! I didn’t plant a single vegetable this year. Sort of let down, but I figured that, at least, I could fetch some from the farmer’s market. It wouldn’t be enough to can or freeze, but we could still have some homegrown suppers. To my delight, one of our neighbors gave us two totes, filled with squash. I was beyond happy!
We’re some squash eating fools over here, y’all. In the last three days, I’ve fried, stewed, frozen, canned, and pickled it. I was definitely feeling a bit down about not planting, but their generosity ‘squashed’ that! So, I want to yell, at the top of my lungs, a big ole ‘Thank you!!’ to the Corkerns!
The chickens were thrilled too, as they enjoyed the squash ‘ends’. The dogs always follow me, as I feed up everyday. Crue was begging for a squash end, so I tossed one towards him, and accidentally hit him on the nose with it. He gave me one of those ‘you’re a mean maw maw’ looks, but quickly forgot about my ill fated aim, and commenced to playing with it. He played with that thing for hours, y’all. So basically, the whole bunch of us have been enjoying this squash.
I have a question for all of the cooks out there. My mama used to make a squash casserole, using saltine crackers. I inherited some of her recipes, but that casserole isn’t one of them. Do y’all have such a recipe? I’d be ever so thankful, if you’d share it with me!
Speaking of Mama, that woman could grow a garden. For years, it was plowed by a mule, but in later years...a tractor. But mostly, she worked that garden with a hoe. The hoe was as much a weapon, as a tool. Hoe a row, and kill a snake. And honey, Cleo Guy was not scared of a snake. They feared HER.
